Dinner at Sage

Dinner | Two evening menus will be offered during winter quarter on non-prix fixe nights of service. Parties will choose between either a table d’hote menu or an a la carte menu. On select dates beginning January 24, Fine Dining students’ individual Sage menus will be featured for one night only, according to the schedule below. Plated Desserts students will design and offer complementary menus from the bakeshop. On student prix fixe menu nights, their singular menu will be offered to all guests. All other nights of service will offer our Evening Winter Menu options.

The American Sages Project
We value the wisdom to be found by studying the masters of our craft. The American Sages that students study while enrolled in Fine Dining and Plated Desserts courses provide inspiration and knowledge that help shape the menus our guests enjoy throughout the quarter.

The American Sages project celebrates stalwarts of American regional cuisine by integrating their work into our curriculum.  Students at the Institute for the Culinary Arts use the wisdom from these sages to guide their menu development process while they are in Fine Dining and Plated Desserts courses.  The cooks on this list are here because they have:
  • made a major contribution to the American culinary scene
  • life stories that champion originality and authenticity in specific regional or ethnic cuisine
  • left an accessible and indelible legacy through books, television, and other media
